Cooked 咸菜鸭汤 for dinner! Using duck drumsticks only instead of the whole duck.
Boiled for more than 2 hours! End result was so good!
Recipe for salted vegetables duck soup:
5 duck legs (available from frozen meat stall, remove excess fats)
1 pack salted vegetables (wash away the liquid and cut)
2 large tomatoes (cut into quarters)
1 carrot (cut into chunks)
1 clove garlic
3 slices ginger
1. Thoroughly thawed duck legs by soaking in water. Drain off well and blanched in boiling water to wash away excess blood n fats.
2. Place all ingredients into a soup pot with enough water to cover all ingredients.
3. Turn on high flame till it starts boiling, reduce to lower flame to simmer for at least 1.5 hours to 2 hours. Add water when necessary.
4. Taste test see if its need some seasoning. I added 1 tsp concentrated chicken stock and some salt for a richer taste.
Always love to cook for family on Sunday! Yesterday we had a large n fresh seabass, stirfry fried garlic sprouts and salted veg duck soup! All well enjoyed!
I kept a portion of the delicious salted veg duck soup for my lunch today at work! So yum!
