Time flies, one more week to go before new school term approaching. Tonight we are having 3 dishes and plus a soup inspired by @aromacookery using walnut and lotus seeds
Dishes on plate are; Stir-fry Napa Cabbage with black fungus and shrimps, Sesame Chicken, Sweet and Sour Fish plus Chicken Soup serve with mixed grains rice. Enjoy your dinner everyone
Soup of day; Chicken with walnut & lotus seeds soup
Ingredients: (serve 2-4)
2-3 chicken drumsticks
1/4 cup dried lotus seeds
10 whole walnut
1 large fig (for soup)
Some red dates & goji berries
1. Blanch chicken in boiling water; remove, rinse and set aside.
2. Bring 1.2L of water to boil, add in all ingredients except goji berry.
2. Lower the heat and simmer for 30 minutes. Season to taste and add in goji berries.
Walnuts are a "warm" food that benefits the spleen (the term for the digestive system), reinforces blood and kidney energy, nourishes lungs and benefits spirit. It is widely used to relieve coughing, frequent urination and poor memory
