It's Monday again and a short week to look forward to due to Good Friday holiday
Tonight I made another quick one-pot meal; Japanese Curry cook with potato, carrot, pumpkin & mushroom. Serve together alongside with breaded pork cutlets, hard boiled egg and blanched broccoli plus mixed grains cooked & sweet potato.
Here are the ingredients that I used for the curry. I sauté the diced onion with potato, carrot & mushroom till onion soften then add water till slightly over the veggies. Simmer on Low heat till 10 minutes before adding in pumpkin cubes and cook for another 5 mins.
When all the root vegetables are soft turn off the heat and stir in Japanese curry cubes till combined. I added 3 pieces but you can add more or less depending on your preference.
